It is useful tool. But how to sharpen the edges in case if it is a mandatory requirement. Some more details about the body make material would be informative to know.
Thanks for the comment. I have contacted Henckels regarding sharpening the edges. As soon as I get a response back I will post it here.
I’ve received a response from Henckels who have provided the following information:
“The double blades mincing knife can be sharpened best with a whetstone, if need be it can also be taken apart – carefully with a screwdriver lest to scratch the surface. The blades a sharpened at the outer side only, hence restoring the original sharpness with an approx. angle of 15-20° should not be a problem.”
