Lodge Pro Logic Cast Iron Aebleskiver Pan

lodge-pro-logic-cast-iron-aebleskiver-panOhmigawd, what a tongue twister. That being said you are just going to love the the Danish treat Aebleskive or Apple slices, which are Danish Pancake Balls. Delicious pastries that are usually filled with apples or other fruit.

In Denmark, during the period around Christmas, Aebleskive are often served with a Scandinavian mulled wine called gløgg.

Because Danish pancake balls are easy to prepare and are great to serve at  parties.  They are also a great seller at markets or sports gatherings and school fete’s.

As a general guide, aebleskive batter is generally made from wheat flour mixed with buttermilk,  milk or cream and  eggs, sugar and a pinch of salt. Some people add some fat – usually butter, cardamom and lemon zest, and a leavening agent such as baking powder although some use yeast to aerate the batter.

Pour the oil into the  oiled indentations , Pam or butter can be used and as the æbleskiver begin to cook you simply turn them with a knitting needle, skewer or fork. This gives the pancake balls their characteristic spherical shape.

Traditionally. aebleskive were  cooked with bits of apple or applesauce inside, but this is often left out in the modern Danish pancake balls.

Although, aebleskive are not sweet to eat in themselves, they are traditionally served dipped in thinned raspberry, strawberry, lingonberry or blackberry jam and then rolled in powdered sugar that has had lemon juice sprinkled it.

Oh, I am drooling while writing this. You really do have to try it.
