With Thanksgiving  fast approaching  we thought that this was the perfect piece of cookware to review.

Not that its use is limited to Thanksgiving. You can use this roaster at any occasion when  friends and family get together to to celebrate and enjoy each others company. Good food – good wine  – good company, what more could you want.

Now I have to tell you what we love about this roasting pan.  Well for a start it will fit a turkey up to 25lbs and  then there is the added bonus in that clean up is a breeze - the non-stick surface makes it so easy. And who wants to spend most of their Thanksgiving and Christmas scrubbing away at pots and pans – not me that’s for sure.

There are some bonus pieces included with the roaster  - a non-stick rack, a baster and lifting forks. This roasting pan and accessories are great value for money and this roaster is one you will use for years to come.

Review: Calphalon Commercial Hard Anodized 12-Inch Everyday Pan with Lid

calphalon-commercial-hard-anodized-everyday-pan-with-lidThis is the  Calphalon Commercial Hard-Anodized 12-Inch Everyday Pan that has 2 loop handles and a lid.

This pan is well named because you will find yourself using it everyday. It can be used for just about anything.

It’s not as shallow as an omelet pan and not as deep as a wok so it’s great for roasting a chicken, frying chops or steaming vegetables. You can also cook an omelet in it, stir fry or sauté. If you leave the lid on your can even make a pot roast in it.

It’s also great for taking straight to the table as it looks so good, so that cuts down on the need for additional dishes and additional cleanup.

As it’s such a good price and a good size for cooking for one to four people, it would be a great gift for anyone leaving home, starting a new home or getting married. It’s like having several items of cookware all in one.

The shape of the pan gives it more space than a 3 quart sauté pan and because the sides are flared, it’s easy to get a spatula under the food to turn it over. The domed lid also increases the capacity so it’s great for one-pot meals.

Some people have complained that food sticks to this pan but the trick is to preheat the empty pan and then when it’s at the temperature that you want, add your oil and ingredients.

So stop meat sticking,  if you just let it brown until it’s caramelized, it will then release itself from the pan.

This pan shouldn’t go into a dishwasher as it will ruin the surface. To clean off stubborn burnt on food, just add hot water to the hot pan, scrape gently with a soft brush and the residue will dissolve. You may find that t’s better not to use too much soap. Just like cast iron, anodized aluminum will become more seasoned the more you cook with it. However, it’s easier to care for than cast iron because if you do have to give it a good cleaning, you don’t need to re-season it.

It seems strange at first to not have a long handle but in fact, the two small stay-cool handles are much easier. This pan goes from stove top to oven so the two small handles fit better and make it easier and safer to lift out of the oven. It’s also easier to pick up a full pan with two hands than one and you’re less likely to drop it or tip it and spill the contents.

Once you have this pan, you’ll wonder how you ever managed without it!

Review: Calphalon Commercial Hard Anodized 2.5 qt Shallow Saucepan With Lid

calphalon-commercial-hard-anodized-shallow-saucepan-with-lid1This Calphalon Commercial Hard-Anodized  Shallow Saucepan with Lid is a 2½ quart, 8¾ inch diameter, 3 inch deep, straight sided pan with lid.

If you’re considering a Calphalon Hard-Anodized saucepan, my first recommendation would be to read the technical details and description very carefully. This is because Calphalon offer two such saucepans which differ slightly but that difference can make a difference to your cooking.

Both saucepans hold 2½ quarts but differ in their diameters and their heights. The ‘regular’ saucepan is 3? inches deep, compared to 3 inches for this ‘shallow’ saucepan. The ‘regular’ saucepan is 7 inches in diameter compared to the 8? inches offered by the ‘shallow’ pan.

These differences don’t sound like much but if you choose this ‘shallow’ pan, with the lower height and greater diameter, you will have a pan with a higher surface area. This means that more of the pan is in direct contact with the heat because it has a larger base. Therefore, more of the food gets exposed to the heat which gives you faster cooking. It is also helpful when making sauces, gravies or reducing because more of the sauce is exposed to the heat below and air above with speeds up the reduction time.

If that doesn’t convince you, just check out the prices. In general, the ‘regular’ pan cost at least 50% more than this more useful ‘shallow’ one. It’s a no-brainer. The extra diameter gives it lots of room for two or three chicken breasts, a steak, or a vegetables. It’s wonderful for dishes like coq au vin because it can go straight from the stove top into the oven. It’s also oven safe up to any temperature which is an enormous bonus and very unusual.

The anodized aluminum is wonderful to cook with because it is such a great heat conductor so it heats up quickly and evenly. Also, you get the bonus that pure aluminum cookware is dissipates heat quickly, so just taking the pan off the heat is an immediate way to drop the temperature – especially useful if you’re making a sauce or something starts to boil over.

The handle is very strong as it’s got three rivets. It’s also well balanced and stays cool for a longish time on the stove top but it’s still best to keep the oven mitts to hand if you’re cooking something for a long time.

The pan is made from heavy-gauge aluminum so it is quite weighty. The amazing heat conduction means that you have to keep your heat down lower than you may be used to. If you don’t, food will burn and stick and as it’s not safe in the dishwasher, you will be making work for yourself. However, a quick soak in hot, soapy water or a sponging with Bar Keepers Friend will rectify most stuck on disasters.

A really great pan – highly recommended!
