The Calphalon Commercial Hard-Anodized 2-1/2-Quart Shallow Saucepan as the name suggests is marketed as a saucepan but to me it looks like a mini saute pan. I think it is somewhere between the two.
Due to the wide base this is an ideal pan for making sauces as it allows for a greater surface area for evaporation for reducing liquids. But really you could cook just about anything in this pan – stews, soups, casseroles.
The pan is made from hard anodized aluminum so it heats evenly without hot spots.
Although not completely non-stick this pan does resist sticking. The trick to ensuring that foods don’t stick is to keep the temperatures a bit lower. These sorts for pans don’t require high heat to work effectively.
