Full Tang
A full-tang knife means that the metal portion of the knife runs all the way from the tip of the blade up through the whole handle. Not all knives do this. You want a knife that feels balanced in your hand. when you pick up a knife you can tell if it is mostly balanced just by taking a moment to feel it. If it feels like it is heaver at one end than the other, you are going to have to compensate for that every time you want to cut something. Likewise, you also need to make sure the blade is balanced side to side so it doesn’t cause you to always adjust your cuts.
High Carbon Stainless Steel
When choosing the material in a knife, you want to look for high carbon stainless steel. This is a type of steel that will avoid discoloration and rusting, unlike other steel blades.
