If you are in the market for a chef’s knife you may have noticed there are a lot of knives out there to choose from and at quite a few different price points. So, how do you know which one you should purchase?
Here are some of the things you should look for in your next chef’s knife purchase:
A full-tang knife means that the metal portion of the knife runs all the way from the tip of the blade up through the whole handle. Not all knives do this. Some instead have a short tang that comprises the blade and a piece of metal that sticks into a handle made of wood or other material. These types of knives are less durable than full tang blades.
Forged Steel is just what it sounds like, knives that are made of steel that has been heated in a forge and then formed into a knife. These knives are known for being more balanced and more durable in the long run
You want a knife that feels balanced in your hand. when you pick up a knife you can tell if it is mostly balanced just by taking a moment to feel it. If it feels like it is heaver at one end than the other, you are going to have to compensate for that every time you want to cut something. Likewise, you also need to make sure the blade is balanced side to side so it doesn’t cause you to always adjust your cuts.
High Carbon Stainless Steel
When choosing the material in a knife, you want to look for high carbon stainless steel. This is a type of steel that will avoid discoloration and rusting, unlike other steel blades.
