T Fal have recognised this and have come up with the 5 inch aluminum, one egg pan for just that purpose.

Of course there isn’t anything stopping you using the one egg pan for cooking small quanities of anything, but personally I like to keep my egg pans just for eggs. This is just a hang over from ‘the old days’ when the material used in pans wasn’t like it is now and if you used your pan for anything other than the eggs, they would forevermore, stick to the bottom.
